Obituary of Carl Provost Carl Paul Provost, 60, of the Nelson Road, AuSable Forks, died Wednesday, February 6, 2019 at The University of Vermont Medical Center in Burlington, Vermont, with his loving family by his side. He was born in Plattsburgh, December 19, 1958, the son of Clayton Provost and the late Bernice (Jessie) Provost. Carl enlisted in the United States Army and served proudly from 1976 until his honorable discharge in 1978. Carl was the chef at Gus' Red Hots for nearly 40 years. He was grateful for his Gus' family including, John, Rebecca, Nick, and Stacy Lambrino, and his many loyal customers. He and his brother Mike, co-owned and operated "Big Time Grilling". Together they offered pig roasts for gatherings throughout the North Country, for many years. Carl loved spending time with his family. He was an avid fan of the NY Yankees, Buffalo Bills, and NASCAR. He also enjoyed hunting and fishing. Left to cherish the memory of Carl are, his loving wife, Karen (Nelson) Provost; two daughters, Brittany and her husband, Chris Sprague, and Nicole Cornick and her companion, PJ Collins; four grandchildren, Brendon Bombard, Peyton Sprague, and Owen and Landon Cornick; father and mother, Clayton and Dorrine Provost; siblings, Julie Dominy, Sheila Rock, David (Kathy) Provost, Lori (Dan) Elder, Charlene Manor, Michael (Judy) Provost, Sharron (Bob) Boice, Karen (Brent) Blaise, and Clayton "Scott" (Alison) Provost; his siblings-in-law, Sue Nolette, Debbie (Bruce) Douglas, Laura Prudhon, Jean Nelson, Fred Nelson, Jr., and Lisa (Kevin) Zaumetzer; many nieces, nephews, and cousins; and his faithful canine companions, Bonnie and Clyde. He was predeceased by his mother, Bernice Provost; parents-in-law, Ted and Grace Nelson; brothers-in-law; and many aunts, uncles, and cousins. A celebration of Carl's life will be held Sunday, February 17, 2019, beginning at 2 PM at his second home, Gus' Red Hots in Plattsburgh. Donations in his memory may be made to The University of Vermont Medical Center, McClure Building, 4th Floor Medical ICU.
